I love to cook and sometimes simple is what works best.
this is one of my favourite meals, simple tasty and very very healthy.
you will need:
half block firm tofu chopped into squares
x 1 carrot sliced
fresh ginger peeled and chopped
x 1 bird's eye chilli, chopped
x 1 garlic clove, chopped
spring onion chopped
bunch soba noodles
3/4 pint organic vegetable stock
any other veggies you love
boil the onion, garlic, chilli and ginger in the vegetable stock for about 3 minutes.
add the chopped vegetables and tofu and boil for a further 5 minutes
add the soba noodles and cook until noodles are soft.
add pepper and soy sauce to taste and enjoy
I like to add a serving of frozen vegetables as well for that veggie overload.
